Masaman Curry With Beef
(Gaeng Masaman Nua)
This Thai cuisine all favorites, ingredients used in the popular Gaeng Massaman which literally translates to “Muslim Curry”. The coconut-based curry is usually made with beef along with potatoes and peanuts. Massaman paste is made up of a whole range of ingredients including chilies, shallots, garlic, galangal, lemongrass, cilantro seeds, cumin, cloves, pepper and shrimp paste. 

Good For Serving : 5 - 7 persons

Ingredients:
  • Peanut oil
  • 1 Tbsp. Garlic, minced fine
  • 1 Tbsp. Galangal, minced fine
  • 1 Tbsp. Lemon grass, minced fine
  • 1 Tbsp. Thai basil, minced
  • 1 1/2 lb Stewing beef, 1" cubes
  • 1 1/2 c. Coconut lowfat milk
  • 2 Tbsp. Curry paste, (Thai Musaman)
  • 1 Tbsp. Lime zest, shredded
  • 1 Tbsp. Lime leaves, shredded
  • 1 Tbsp. Fish sauce
  • 1 tsp Chili paste, up to 4
  • 2 c. Potatoes, cut into 1" cubes
  • 1 c. Pearl onions

Masaman Curry With Beef Cooking Instructions:
  • First, prepare the curry paste and coconut lowfat milk seperately. Add in the paste with some of the 'cream' form the coconut lowfat milk and heat till the oil starts to separate. Then, in a separate pan, heat peanut oil, garlic, galangal and lemon grass. Stir fry 1 minute till oil is aromatic.
  • Add in beef and stir fry 3 min till lightly browned and add in the curry paste/coconut cream mix
  • Add in the rest of the coconut lowfat milk, lime zest, lime leaves, basil, fish sauce and chili paste, bring to a boil, and reduce heat.
  • Simmer 45 min, till beef is tender.
  • When beef is just tender, add in potatoes and onions to curry and simmer 30 min, till potatoes are cooked.
  • Yield - 6 c.
