Beef Mami (Beef Noodles Soup) Recipe

Beef Mami is a type of Beef Noodle soup that is of Chinese origin. This dish is a very popular served in most Chinese food chain and restaurants in Philippines. Basically Beef Mami is composed of tender beef brisket and egg noodles in hot beef stock. Mami is usually ordered with its sidekick “Siopao” – a steamed bun stuffed with either pork asado or bola-bola and pork barbecue.



Good for serving: 3-4 persons

Ingredients:
  • 1 lb beef brisket 
  • 6 pieces star anise 
  • 1 piece beef cube 
  • 2 liters water 
  • 2 tbsp cooking oil 
  • 5 tbsp minced garlic 
  • 1/2 cup soy sauce
  • 1/2 cup sugar
  • 1 medium sized onion, minced 
  • 1/4 cup green onions, chopped 
  • 14 ounces egg noodles, cooked 
  • 1 cup pechay baguio (chinese cabbage) , chopped 
  • salt and pepper to taste

Cooking Instruction:
  1. Put the oil in a cooking pot and apply heat 
  2. Saute the 3 tbsp garlic until golden brown then set aside.
  3. Saute remaining garlic and onions Put-in the beef brisket and cook until the color of the outer part turns light brown 
  4. Add the beef cube, sugar, soy sauce and star anise 
  5. Pour-in the water and bring to a boil. 
  6. Allow to boil until beef becomes tender 
  7. Add salt and pepper to taste, set aside
  8. In cooking egg noodles. In a casserole, bring to boil 1 liter of water. 
  9. Add 1 tbsp cooking oil and 1 tbsp of salt then include mami noodles and bring to boil for 30 seconds, remove the noodles, drain to remove excess water.
  10. Place the cooked egg noodles and Chinese cabbage in a serving bowl 
  11. Pour the soup and beef brisket on the bowl with noodles then garnish with garlic and green onions on top. Serve hot.
