Beef Tapa Recipe

Beef Tapa is dried or cured beef similar to beef jerky. Filipinos prepare thin slices of meat and cure it with salt and spices as a method of preserving it. Tapa is best fried or grilled, often served during breakfast with garlic rice (fried rice), fried egg and achara (pickled papaya strips) or spicy vinegar.

Other meats used to make tapa, before meats from wild animals such as carabao, wild boar deer were sundried  and horse's meat.


There are several ways on how to cook beef tapa, it is depend on your preferences in serving the dish. For this presentation we use a clear plastic bag for the process of cooking.
Good for serving: 4-5 persons

Ingredients
  • 1 kilo beef sirloin, thinly sliced  
  • 1 head garlic, finely minced garlic 
  • 1/2 cup soy sauce
  • 1/2 cup vinegar 
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/4 cup sugar
  • 1 clear plastic bag (ziploc)
Cooking Procedure:
  1. In marinating bowl, combine all the ingredients. 
  2. After mixing all the ingredients place the beef in the clear plastic bag or ziploc
  3. Pour the mixed seasonings in the Ziploc with meat and mix well
  4. Place in refrigerator at least an hour or overnight
  5. In a pan, place 2 cups of water and bring to a boil
  6. Add the marinated beef tapa and cook until the water evaporates.
  7. When all the water evaporated add 3 tbsp of cooking oil in the pan then fry the tapa until done.
  8. Serve with garlic rice and fried eggs, with vinegar condiments
  9. Share and enjoy!
