Spicy Beef Kaldereta Recipe

One of the Filipino dishes served during festival, birthday and other special occasions is the Kaldereta or Caldereta and always available in Filipino restaurants and carenderia along the hi-way especially in Southern Luzon. This is a hearty meat dish using chevon in its name Kaderetang Kambing (using goat meat), beef, pork or even Boneless Bangus (Milkfish).

Kaldereta is originally a goat stew made with tomato sauce, potatoes, spices, liver spread, olives, bell peppers and hot peppers.


Traditionally, kaldereta sauce is thickened with mashed cooked liver and tomato sauce/paste. In modern cooks substitute canned liver spread or bottled liver paste, that is available in supermarket and grocery store.

Good for serving: 5-7 persons

Ingredients
  • 1 kilo of stewing beef, cubed 
  • 3 garlic cloves, finely minced garlic 
  • 3-4 pcs. medium size of white onions, finely chopped 
  • 2 bell peppers, finely chopped 
  • 1/2 cup of tomato paste 
  • 1/4 kilo of tomatoes, finely chopped
  • 3 pcs. bay leaf 
  • 4 tbsps. of olive oil 
  • 1/4 k. of chicken livers
  • 4 cups of water
  • 2 cups potatoes, sliced 
  • 2 cups carrots, sliced
  • 3/4 cup of frozen sweet peas 
  • 2-3 red hot chili peppers chopped 
  • 2/3 cup green olives  (stoned or pitted) 
  • cooking oil for frying the potatoes
  • salt an pepper to taste 
Cooking Procedure:
  1. In a small casserole, boil the chicken livers with a little water. 
  2. When  chicken livers  is cooked, mash with a fork or pass through the blender or food processor, adding a little liquid will make the process easier. then set aside.
  3. Heat the cooking oil in the pan and fry the carrots and potatoes until color turns light brown.
  4. Remove the fried carrots and potatoes from the pan and set aside. 
  5. In another  heavy sauce pan or casserole, heat the olive oil, over high heat, brown the beef chunks, in batches if necessary.
  6. Add the garlic, onions, tomatoes, bay leaf, chili peppers and simmer for 5 minutes.
  7. Add water and let the beef boil until tender (about 30 mins if using pressure cooker or 1 to 2 hours if using an ordinary pot)
  8. Add the tomato paste and chicken liver and simmer for 10 minutes.
  9. Add green olives, carrots, sweet peas, bell pepper,and potatoes and simmer for 5 to 8 minutes
  10. Add salt and pepper to taste.
  11. Serve hot! Share and enjoy!
