Cooking Procedure:
- In a small casserole, boil the chicken livers with a little water.
- When
chicken livers is cooked, mash with a fork or pass through the blender or food processor, adding a little liquid will make the process easier. then set aside.
- Heat the cooking oil in the pan and fry the carrots and potatoes until color turns light brown.
- Remove the fried carrots and potatoes from the pan and set aside.
- In another
heavy sauce pan or casserole, heat the olive oil, over high heat, brown the beef chunks, in batches if necessary.
- Add the garlic, onions, tomatoes, bay leaf, chili peppers and simmer for 5 minutes.
- Add water and let the beef boil until tender (about 30 mins if using pressure cooker or 1 to 2 hours if using an ordinary pot)
- Add the tomato paste and chicken liver and simmer for 10 minutes.
- Add green olives, carrots, sweet peas, bell pepper,and potatoes and simmer for 5 to 8 minutes
- Add salt and pepper to taste.
