"Ginger Chicken Stew with Vegetables"
Tinolang Manok also known as tinola (Chicken Ginger Stew with Vegetables) is a favorite home-style dish of the Filipino. This simple broth with chicken, chili leaves or malunggay (moringa) leaves, green papaya or sayote (chayote) and the aroma taste of ginger will distinct the flavour of the chicken soup in light and refreshing of your taste buds.
Good for serving:  5 - 6 persons

Ingredients:
  • 1 kilo whole chicken, cut into pieces. 
  • 1 small green papaya or sayote, cut into small pieces. 
  • 2 tablespoons ginger, crushed and slliced into strips 
  • 1/2 cup chili leaves or malunggay leaves 
  • 1 liter of water 
  • 5 garlic cloves, minced 
  • 1 red onion, diced 
  • 4 tablespoons oil 
  • 2 tablespoons patis (fish sauce) or 
  • salt to taste

Tinolang Manok Cooking Instruction:
  1. Heat the oil in a large pot over medium flame. 
  2. Add the chicken pieces and sauté until lightly browned on all sides, 5-7 minutes. 
  3. Add the onions and sauté until translucent, about 3 to 4 minutes. 
  4. Next add the garlic and ginger and sauté for another 2 to 3 minutes. 
  5. Stir in the water to cover, fish sauce, fish sauce bring to a boil. 
  6. Reduce heat to low, add back the browned chicken pieces and simmer for 25 to 30 minutes, stirring occasionally and skimming off any scum that rises to the surface. 
  7. Add the cubed papaya or sayote and simmer for another 5 to 10 minutes, or until cooked through. 
  8. Remove from heat, adjust seasoning and stir in the chili or malunggay leaves. 
  9. Serve hot.
