Pata Tim ("Patatim") is a Filipino dish. Its main ingredient is the pork leg. The pork knuckles (pork leg) is slowly boiled to make the pork leg tender. Soy sauce, sugar and a couple of pieces of star anise are the main ingredients that give the pork a sweet and spicy taste. It has just the right amount of fat giving us a generous chunk of meat per slice. The sauce was very rich and delicious. It is the ideal dish to serve at dinner for the whole family to enjoy.


Good for serving:  4 - 5 persons

Ingredients:
  • 1 small piece pata, pork leg
  • 100 grams fresh shitake mushroom, stem trimmed
  • 1 bunch bok choy sum, stem trimmed, blanched
  • 1/4 cup soy sauce
  • 1 cup red wine
  • 3 tbsp. oyster sauce
  • 1 head garlic, crushed
  • 1 red onion; chopped
  • 1 piece star anise
  • 1/4 cup sugar
  • 1 stick cinamon
  • 1 tablespoon pepper corns  
  • 3 bay leaves 
  • 1 1/2 tbsp. cornstarch
  • 1 to 1 1/2 tbsp. sugar
  • salt to taste

Pata Tim Cooking Instruction:

  1. Place the pork's leg (pata) into a medium pot. Pour the light soy sauce in the pot.
  2. Place the star anise, pepper corns , garlic, bay leaves,  on top of the (pata). 
  3. Shake sugar into the pot over the top of the everything in the pot..
  4. Pour in the mushrooms and the liquid they are in into the pot and add the spring onions. 
  5. Pour water into the pot until it covers the pata. 
  6. Cook all of the ingredients on high heat until it comes to a boil. 
  7. Lower the heat until the contents of the pot are simmering and let the pata cook for approximately 4 hours, until it is tender.
