Pata Tim Cooking Instruction:
- Place the pork's leg (pata) into a medium pot. Pour the light soy sauce in the pot.
- Place the star anise, pepper corns , garlic, bay leaves, on top of the (pata).
- Shake sugar into the pot over the top of the everything in the pot..
- Pour in the mushrooms and the liquid they are in into the pot and add the spring onions.
- Pour water into the pot until it covers the pata.
- Cook all of the ingredients on high heat until it comes to a boil.
- Lower the heat until the contents of the pot are simmering and let the pata cook for approximately 4 hours, until it is tender.
