Sweet and Sour Fish Fillet (Lapu-lapu) Recipe

Sweet and sour fish is breaded fish in a delicious sweet and sour sauce with an assortment of fruits and vegetables. You can basically use any kind of white fish for this recipe such as tilapia, lapu-lapu, dori and etc. It is always good to try and find nice meaty fillets if possible but in my recipe I used lapu-lapu because this is one of the best tasting fish and is good for recipe.
Good for serving: 3 - 5 persons

Ingredients:
  • 2 medium size Lapu-lapu
  • eggs beaten 
  • 1 1/2 cup breadcrumbs
  • 1/2 cup of calamansi or lemon juice
  • 234 grams pineapple chunks with juice
  • 1 medium size carrots  chunks
  • 1 large green bell pepper 
  • 1 large red bell pepper 
  • 1/4 cup cooking oil
  • 3 garlic cloves minced 
  • 2 onion, cut in quarterly size 
  • 1/2 cup cornstarch dissolved in water 
  • 1/4 cup vinegar 
  • 1/4 cup soy sauce 
  • 1/2 cup of orange juice
  • 2 tablespoons sugar 
  • salt and pepper
  • spring onions, cut in an inch

Cooking Instruction:
  1. Clean the fish thoroughly and peel. 
  2. Remove fish bone and Cut the flesh into small strips.
  3. Mash of calamansi juice, salt and pepper
  4. Prepare fish fillet by dipping each piece on the beaten eggs then cover them with breadcrumbs. 
  5. Fry until golden brown.
  6. In a saucepan, saute garlic and onion. add carrots, red and green bell pepper and cook for about 3 minutes. 
  7. Put in the pineapple and pineapple juice. pour in vinegar, soy sauce, orange juice, sugar, and cornstarch. bring to a boil. stir constantly until sauce thickens. 
  8. Add spring onions, salt and pepper to taste. 
  9. Remove from heat then add the fillet on the sauce pan. Stir and then serve with rice.
