Seafood Pinakbet Recipe

Pinakbet is popular throughout the Philippines, with  different regional variations depending on ingredient availability and local taste adaptations, but this vegetable dish was originated as Ilocano dishes. It is basically a mix of string beans, okra, eggplant, pumpkin, and bitter gourd (ampalaya) cooked in broth and spices until the liquid is reduced, which is where it gets its name from, “pinakebbet”, which means, “made smaller”. This is usually flavored with bagoong, or shrimp paste.

Today,  I have to share with you another version of pinakbet, they called it Seafood Pinakbet. I and my colleague accidentally discovered this delicious dish in Tridem Restaurant in Mariveles, Bataan during our stressful training seminars. lol! :) Thanks pals!

Since Mariveles is located in grand entrance of Manila bay and West Philippine sea (China sea) and coastal tip of  province of Bataan. Mariveles is a well known as industrial area producing of quality bags and shoes. Aside that, the town is also well known  abundant of seafood in the province.

Because  the availability of seafood, it is easy for them to prepare a seafood plus pinakbet equal to a delicious and yummy Seafood Pinakbet dish. Let's try it!

Good for serving: 4-5 persons

Ingredients
  • 1/2 kilo of Squid, cleaned cut 
  • 1/4 kilo of Prawn  
  • 1/2 kilo of Alimasag (Blue crabs), cut 
  • 1/2 cup of bagoong alamang (shrimp paste)
  • 1/2 Squash, diced
  • 1 pc. riped tomatoes, cut 
  • 6 pcs of Okra, cut 
  • 2 medium sized eggplants, cut 
  • 1 medium sized Ampalaya, sliced 
  • 1 string beans, cut about 3 inches sized 
  • 1 head of Garlic, crushed 
  • 1 medium size Onion, minced 
  • 1/2 cup margarine 
  • 2 cups of water 
  • Salt to taste

Cooking Procedure:
  1. Heat a large pan or casserole and add margarine
  2. Saute garlic until slightly browned, add in onions and tomatoes and continue frying until translucent.
  3. Add bagoong alamang/shrimp paste then mix well and simmer for 2 minutes. 
  4. Add squid, prawn and alimasag, let it cook for 3 minutes then add 2 cups of water.Let it boil for 3 minutes 
  5. Then add the squash. Simmer for another 2 minutes until the squash is cook.
  6. Add all remaining vegetables.
  7. Add salt to taste then simmer until vegetables are cook according to your taste.
  8. Serve hot. Share and enjoy.
