Pork Menudo Recipe

Pork Menudo  is a stew of pork meat and liver cubes with with potatoes, carrots and tomato sauce. This dish is delectable menu with distinct tastes of sweet and sour made from rich tomatoes and lemon or calamansi juice. One of the many Filipino recipes that always served during fiesta, holidays and special occasions.


Good for serving:  5 - 6 persons

Pork Menudo Ingredients:

  • 2 lb. pork belly, cut into cubes 
  • 1/2 lb. pork liver, cut into cubes 
  • 1/2 cup soy sauce 
  • juice of 1/2 lemon (or juice of 4 calamansi) 1/4 cup vegetable oil 
  • 3 cloves garlic, chopped 
  • 2 pc hotdog, slice
  • 1 onion, chopped 
  • 2 cups tomato sauce 
  • 1 cup water 
  • 1 tsp. brown sugar 
  • 1 bay leaf 
  • 1 cup potatoes, diced 
  • 1 cup carrots, diced 
  • 1 cup red and green bell pepper, diced 
  • 1/2 cup grated cheese
  • salt and pepper, to taste

Pork Menudo Cooking Instruction:
  1. Marinate liver and pork in soy sauce, bay leaf and ground black pepper for 1 hour. 
  2. Sauté garlic and onion. Add marinated liver and pork. Continue sauteing until all liquid has evaporated and meat starts to render fat. Add potatoes, carrots, tomato sauce and water and simmer for 15 minutes. 
  3. Add hotdog and red/green pepper . Continue cooking in medium fire for 5 minutes or until done.
  4. Add grated cheese and season with little sugar (if desired) according to taste. Serve hot!
