Ampalaya Con Carne Recipe

Ampalaya, also known as Bitter Melon, is a crawling vine that grows well in tropical countries, particulary in Philippines. Known for its bitter taste, the Ampalaya is at once a staple ingredient in Filipino and Asian cuisine and a reliable home remedy for various illnesses, particularly diabetes because of its blood sugar-lowering anti-diabetic properties.

This dish is a lovely way of serving and eating beef with ampalaya.

Good for serving: 4 - 5 persons

Ampalaya Con Carne Ingredients:
  • 2-4 medium sized ampalayas 
  • 4 cloves crushed garlic 
  • 2 tbsp. chopped onion 
  • 6 ginger cloves, sliced 
  • ½ kilo Beef or pork, cut into 1 x ½ inch strips 
  • ¼ cup water 
  • 3 tbsp. corn starch 
  • 2 tbsp. sesame oil 
  • ½ cup soy sauce 
  • ¼ cup celery, diced

Ampalaya Con Carne Instruction:
  1. Mix corn starch, sesame oil, soy sauce and 3 crushed garlic cloves. Marinate beef strips in mixture for 20 minutes. 
  2. Slice ampalaya lengthwise to discard the seeds with a spoon, then cut into strips. 
  3. In a separate pan, heat olive oil and cook the beef. Set aside its marinade for later use. 
  4. When already cooked, remove beef from the pan then sauté garlic, ginger slices and onion till slightly brown. 
  5. Add the ampalaya slices, and the beef with its marinade and soy sauce, simmer for 3 to 5 minutes and then add celery. 
  6. Serve hot with steamed white rice. 
  7. Share and Enjoy!
Note: Do not overcook the vegtables
