Dinakdakan (Grilled Pork w/ Mayo and Spices) Recipe

Dinakdakan (Grilled Pork w/ Mayo and Spices) of Ilocano
Dinakdakan is an Ilocano dish, that is well known recipe not only in the localities of Ilocano region but also in Manila and nearby province aswell., it is similar to sisig how ever dinakdakan is grilled pig head/face,cut in small slices against sisig which is chopped or cut in small cubes. It is actually serve as appetizer for those who love drinking liquor but it is equally good for viand. Preparation is similar to pork kinilaw with the addition of pork brain and/or mayonnaise.
Good for serving: 6 - 8 persons

Ingredients:
  • 1/2 kilo pig ears, or pig snoout, or pig skin (variety meats) 
  • 1/2 kilo pork 
  • 1 thumb size ginger, chopped finely 
  • 4 medium size onion, chopped finely 
  • 3-4 pcs. siling labuyo, chopped finely 
  • 1/4 cup calamansi juice or lemon juice
  • 1/2 cup mayonnaise or pig brain, boiled then mashed
  • 1 tbsp. peppercorn 
  • 3 pcs. bay leaf  
  • coarsely ground pepper

Dinakdakan Cooking Instruction:
  1. Boil the pork cubes in water with salt until tender. Remove from water when cooked; set aside. 
  2. Meanwhile, grill the variety meats until tender but not crispy. 
  3. Slice the variety meats into 1/2″-wide and 1″-long pieces. 
  4. Place pork cubes and grilled variety meats in bowl. 
  5. Add the garlic, minced onion, calamansi or lemon juice and mayonnaise (or mashed brain, if you have the dish to be traditional). Mix well and serve immediately.
  6. For a spicer dinakdakan, add chopped bird’s eye chili.

I really miss home as well as the Filipino foods. Dinakdakan is my favorite especially when there's bottle of beers with friends.
