Soimai Recipe

Siomai is a Chinese dumpling dish. This popular dumpling has conquered the taste buds of the Filipinos. It is usually sold in hundreds of stalls, eateries, and restaurants all over the Philippines. One can order different kinds of siomai but the base is always pork or either beef. Traditionally cooked through steaming, siomai nowadays are also served fried complimented with soy sauce, calamansi and chili sauce.

Filipino makes different variety of soimai because of availability of the ingredients. But basically it makes use of ground pork/beef and shrimp as the main ingredients.


This dish takes few easy steps to complete and will just take you 50 minutes to prepare.
Good for serving: 3 - 5 persons

Pork Soimai Ingredients:
  • 2 1/2 lbs ground pork/beef 
  • 1 cup shrimp, minced 
  • 2 cups water chestnuts, minced 
  • 5 tbsp sesame oil 
  • 1 tbsp ground black pepper 
  • 1 cup onion, minced 
  • 1 cup carrots, minced 
  • 1bunch of spring onions or leeks
  • 1 1/2 cups white mushroom, minced 
  • 1 pack won ton wrapper 
  • 1/4 cup scallions, minced 
  • 2 tsp salt 
  • 1 piece raw egg 
  • Water for steaming
Pork Soimai Sauce Ingredients;
  • soy sauce 
  • calamansi (lemon or kumquats) 
  • chilli paste (for the sauce)

Soimai Cooking Instruction:
  • Combine all the ingredients except for the water and wanton wrapper and mix thoroughly.
  • Adjust seasoning according to taste.Put in the refrigerator for at least 30 minutes.
  • Remove filling from fridge. Scoop about 1 table spoon full of filling and put it on the center of won ton wrapper; seal both edges and flatten the top and bottom. Repeat procedure for remaining mixture.
  • Remove the meat from the pot and let it cool down for a few minutes.
  • Using a steamer, steam the wrapped siomai (shaomai) for 15 to 25 minutes. The time depends on the size of each individual piece (larger size means more time steaming).
  • Serve hot with soy sauce and calamansi or lemon dip and add chili sauce for spicy taste
