Sinampalukang Manok Recipe

Sinampalukang Manok is one of the popular sour soup in the Philippines. This dish are composed of chicken, vegetables, and tamarind leaves or tamarind blossoms. In northern part of Luzon they add ginger to remove the stench taste of the chicken and give additional aroma taste to the dish.  Some say that sinampalukang manok is just like sinigang dish, the only difference is the used of taramind leaves and blossom.

Most of the time I prepared to cook sinampalukang manok than sinigang na manok because of the distinct taste of the tamarind leaves.


Good for serving: 5 - 6 persons

Sinampalukang Manok Ingredients:
  • 1 kilo chicken, sliced into serving pieces 
  • 3 cups fresh kangkong or spinach
  • 3 medium tomatoes, quartered 
  • 1 medium size, radish
  • 2 tablespoons fish sauce 
  • 1 1/2 cups tamarind leaves or blossoms 
  • 1/2 lb string beans
  • 2 green finger pepper chili (siling haba)
  • 1 medium onion, sliced 
  • 5 garlic cloves, chopped
  • 1 tablespoon sinigang mix (optional) 
  • 3 tablespoons cooking oil 
  • 3 to 4 cups water
  • salt to taste

Sinampalukang Manok Instruction:
  1. Heat oil in a cooking pot. 
  2. Saute onion, garlic and tomatoes. 
  3. When the onions and tomatoes becomes soft, add the chicken and then cook until the color of the outer part turns light brown. 
  4. Pour-in the fish sauce, and then add water and let boil. 
  5. Add tamarind leaves and sinigang mix powder. Simmer until chicken becomes tender. 
  6. Add the radish and string beans. Cook for 5 to 8 minutes. 
  7. Put-in the kangkong and salt to taste and cover the cooking pot. 
  8. Let the cover stay for 5 to 6 minutes for the residual heat to cook the spinach. 
  9. Transfer to a serving bowl. Serve.
