Filipino Style Pork Barbecue Recipe

Pork Barbecue (BBQ) is typically marinated of pork in special sauce and  speared in bamboo skewers and grilled.

In the Philippines, there are many varieties of barbecue (pork, chicken and fish). Many Filipino's eat barbecue as an appetizer, meal, and snack, this traditional dish is commonly available along the street in the metro and even served in restaurant, bars and food chains.

So be patient when it comes to preparing these mouth-watering street delights.

Good for serving:  5 - 7 persons

Pork Barbecue Ingredients:
  • 1 kilo pork shoulder butt
  • 1 head garlic, minced
  • 1/4 cup calamansi or lemon juice
  • 1/2 cup soy sauce
  • 1/3 cup brown sugar
  • 1/2 cup banana ketchup
  • 1 can 7-up or Sprite soda
  • 1 teaspoon ground black pepper
  • Bamboo skewers
Pork Barbecue Cooking Instruction:
  1. Prepare pork by slicing it into 1/2 inch thick, 1 1/2 inch long and 1 inch wide pieces.
  2. In a large bowl, combine garlic, calamansi juice, soy sauce, sugar, ketchup and soda. Add pork pieces and mix well. Cover with plastic wrap and refrigerate overnight.
  3. Soak the bamboo skewers in water for at least one hour.
  4. Prepare basting sauce by combining ¼ cup lemon juice, 1/2 cup soy sauce, 1/3 cup brown sugar and ½ ketchup. Set aside.
  5. String the pork pieces on skewers, around 5-6 pieces on each stick.
  6. Grill on medium heat until cooked, basting and turning every few minutes on each side.
  7. Serve with vinegar garlic dipping sauce. Enjoy!
