Adobong Tahong (Green Mussels Adobo) Recipe


Adobo is a very well known delicious recipe in the Philippines even in Filipino community all over the world. Normally, the main ingredient using in this dish is chicken or pork or combination of the two (chicken and pork), cut into bite pieces. It is first sauted in garlic and onion and when tender enough, you add pepper, soy sauce and vinegar (depending to your taste and the quantity of meat), and then put to boil, then simmer till you have a pastry sauce.


In this blog, instead of chicken or pork as the main ingredients, I prepared to used mussel or tahong. This is another alternative method of cooking tahong, usually we cook mussels by boiling it with onion and ginger (mussels soup).

Good for serving: 3 - 4 persons
Ingredients:
  • 1 kilo, green mussels / tahong 
  • 1/2 head garlic crushed 
  • 1 thumb, ginger, crushed 
  • 1/2 cup vinegar 
  • 3 tablespoons, cooking oil 
  • 1-4 tbsp. soy sauce 
  • 2-3 pcs. bay leaf 
  • 1 tsp. peppercorns 
  • 1 medium onion, diced 
  • 1-2 red chili,(siling labuyo) sliced 
  • salt to taste 
Adobong Tahong Cooking Instruction:
  1. Wash and clean the mussels,beard removed, boil it with ginger in a pan until the shells are open.
  2. Remove the mussels meat.
  3. In medium heat, set a sauce pan with the cooking oil, then sauté garlic, onion, until the onion is translucent.
  4. Add mussels, peppercorns and bay leaf, stir, cook for 2 minutes
  5. Add soy sauce, vinegar and red chili
  6. Simmer until most of the liquid has evaporated and stirring occasionally.
  7. Season with salt to taste. Turn-off the heat  
  8.  
  9. Add chilli leaves, fish sauce, coconut meat (this is where you add the coconut meat if it’s soft) then simmer for 2 more minutes.
  10. Season with salt according to taste, then turn-off the heat. 
  11. Serve it on a bowl or coconut shells.
  12. Serve hot with rice. Share and enjoy
